This recipe is delicious and an alternative to traditional eggnog. To cut down on the calories you can use skim milk or low fat milk and low fat ice cream.

Eggnog Milkshake
  • 1 tablespoon sugar
  • Dash salt
  • 1 cup milk
  • ½ teaspoon vanilla
  • 1 scoop vanilla ice cream
  • Nutmeg


Directions

In blender combine first 5 ingredients. Mix until frothy.

Top each serving with a scoop of ice cream. Sprinkle with nutmeg.

Christmas Recipes: Edible Gifts. No.4 of 8 – Chocolate Truffles ...


Chocolate Truffles

Recipe
Makes: 2 dozen
Calories per truffle: 65
Preparation time: 30 – 60 minutes
Cooking time: 0 minutes
Suitable for freezing


Ingredients: 


Truffle Mixture:
Chocolate, bitter, plain or milk 225g (8 oz)
Double cream, 75 ml (3 fl oz)
Brandy, 75 ml (3 fl oz) or rum,orange liqueur, coffee liqueur, coconut liqueur


Rolled Truffles:
Cocoa powder
Chopped nuts
Coconut, dessicated or grated
Chocolate vermicelli or grated chocolate for rolling


Dipped Truffles:
Chocolate, plain, milk or white (350 g (12 oz) or mixture of all three


Suitable for freezing.

Instructions:

1. Truffle Mixture: Add the cream to grated chocolate and melt in a bowl over water at boiling point, stirring until smooth. Allow to cool and thicken.

2. Add your alcohol of choice and whisk until the mixture is strong enough to stay 'up' when a strand of mixture is pulled up by the whisk. Then put the mixture into a shallow tin (covered) and cool till firm.

3. Rolled Truffles: Place teaspoonful size amounts of truffle mixture onto a tray sprinkled with cocoa powder and roll into ball shapes. Alternatively you can substitute the cocoa with grated chocolate, chopped nuts, coconut, or chocolate vermicelli. Cool in a refrigerator for at least two hours.

4. Dipped Truffles: Roll the truffle mixture into 2.5 cm (1 inch) size balls and freeze overnight until rock hard. [If you wish you could push some edible decor into the balls before cooling, such as nuts, ginger or cherries.]

5. Prepare some melted chocolate over water at boiling point. If you can, check the temperature is in the range 46-49 degrees centigrade (115-120 F) or for white chocolate, 43 degrees centigrade.

6. Taking two or three truffles at a time, use cocktail sticks to dip them into the melted chocolate before placing them on non-stick paper. Transfer to a refrigerator for cooling for at least two hours to harden. Repeat for the remaining truffles.

7. Present the truffles in paper cases and store in boxes. Keep in a refrigerator for up to ten days.

Contrary to popular belief, not all Thai recipes are hot and spicy. Thai cooking and Thai recipes offer a wide range of dishes ranging from very mild to very hot. It all depends on what you own individual tastes are. This first Thai recipe is a very mild and simple noodle dish that is both tasty and healthy. Pad Thai noodles are a staple Thai recipe. They are an excellent well balanced meal containing noodles, chicken, prawns and egg, all fried in a wok. For 2 servings you will need the following list of ingredients.

Pad Thai noodles

100g of wild rice noodles
100g of chicken breast, finely chopped
3 sliced shallots
2crushed garlic cloves
¼ teaspoon crushed dried challis
2 tablespoons of Thai fish sauce
1 tablespoon of granulated sweetener
Juice of 1 lime
150g of bean sprouts, rinsed
60g of small prawns
1 beaten egg
2 spring onions chopped
2 inches of finely chopped cucumber
½ red chili sliced and de-seeded
2 tablespoons of fresh coriander
15g of salted peanuts

To begin this Thai recipe, soak the rice noodles in boiling water for approximately 5 minutes unless otherwise indicated on the package. You need to stir, separately the strands and when finished drain and rinse in cold water.

Heat either your cooking spray or oil in your wok until it starts to smoke. Then add the chicken, shallots, garlic and crushed chilies. Fry and stir for 3 minutes.

The next part of this Thai recipe is to mix the fish sauce, sweetener and lime juice together and pour it into the pan. Soon after, add the bean sprouts and well drained noodles. Cook everything together for 1 minute and then add the prawns. Cook the prawns with everything else for a further 1 minute.

Next drizzle the egg over the noodles and leave it to set for about 1 minute. The garnish ingredients need then to be mixed. Once mixed, add half to the pan. Mix everything together one last time and then serve in warmed bowls. You may choose to top the remainder of dish with the remainder of the garnish.

This Thai recipe is both tasty and healthy. This Thai recipe serves 2 people with less than 450 calories per serving. This Thai recipe also allows for a vegetarian option. You can use Tofu in place of the chicken as well as substituting a light soy sauce for the Thai fish sauce.

The second Thai recipe that we will discuss is usually served in Thai restaurants as an appetizer. These are Thai fish cakes. This Thai recipe only takes about 20 minutes to make and have a mild 118 calories per serving. For the dipping sauce you will need the following:

Thai fish cakes

2 tablespoons of soy sauce
1 tablespoon of granulated sweetener
1 ½ inches of diced cucumber

For the main Thai recipe, you will need:

Grated Zest and juice of 1 lime
2 tablespoons of fresh coriander
1 red chili de-seeded and finely diced
1 inch of ginger root, peeled and sliced
1 stalk of lemongrass, chopped roughly
1 tablespoon of Thai fish sauce
400g of skinless Haddock fillet and diced
1 egg white
60g of green beans, trimmed and sliced
cooking oil

First mix the sweetener, soy sauce and cucumber with 1 tablespoon of lime juice and 1 tablespoon of coriander and half the diced chili. Mix the lime zest and juice in a food processor with the remaining coriander and chill, lemongrass and fish sauce.

Blend all of these together until finely chopped. Then add the fish and pulse together until well blended. Place the mixture in a bowl and stir in the egg white, corn flour and beans. Stir all of this tougher until finely combined.

Dampen your hands and shape into fishcakes. This Thai recipe should make about 12 fishcakes. Heat your frying pan and oil of your choice.

Cook the fishcakes in 2 separate batches for about 2 ½ minutes on each side. When finished serve with the cucumber dipping sauce from the first part of the Thai recipe.

Whitefish Salad Bagel Breakfast Recipe

Though many people go to their local deli for this traditional Jewish spread, it can be easily made in the comfort of your own home.  I discovered that for myself one summer when all of the local delis were sold out of whitefish salad.  At the last deli in within 30 miles of my home, I was privileged to have caught the attention of a sympathetic deli chef as I exasperatingly explained that I'd been to every deli in my town and had driven 30 miles to this particular town because it was known for it's whitefish salad.  He seriously felt bad for me and so shared what I considered an eye-opening secret...whitefish salad was simple.  Exactly that, simply made with simple ingredients...It was HOW you prepared it and served it that was the secret. From this kind man came this recipe for the whitefish salad bagel breakfast as they served it at their deli.

Whitefish Salad

1 whole smoked whitefish

1 to 2 Tablespoons Mayonnaise
A dash of pepper
(no salt is needed as the smoked whitefish is salty enough)

Remove the skin from the fish filet. Carefully remove all bones.  Place the fish in a medium sized Tupperware bowl.  Add Mayonnaise and mix until the fish becomes almost spreadable.  Add pepper to taste.  Stir and mash mixture in the bowl, carefully keeping an eye out for any missed bones.  As the mixture becomes spreadable you should be able to see any missed bones, as they will stick up out of the mixture as you're turning and stirring it.

Bagels (any kind but recommend combination, onion, or jalapeno for additional flavor)
Cream cheese
1 Tomato, sliced
1 Onion, sliced

Toast the desired amount of bagels, spread each with cream cheese.  Then spread a thick layer of whitefish salad on top of the cream cheese.  Top with tomato and onion.


Refrigerate any leftover whitefish salad and enjoy again for days.

Serve with fresh fruit or a fruit salad

Irish Stout Chicken Recipe

Irish Stout Chicken

2 tablespoons vegetable oil
1 medium onion, chopped
2 large cloves garlic, minced
1 whole chicken (3 to 4 lbs), cut up
5 carrots, peeled and chopped
2 parsnips, peeled and chopped
1 teaspoon dried thyme
3/4 teaspoon salt
1/2 teaspoon black pepper
3/4 cup stout (such as Guinness)
1/2 pound fresh button mushrooms
3/4 cup frozen peas

1. Heat oil in large skillet over medium heat until hot.  Add onion and garlic; cook and stir 3 minutes or until tender.  Remove the vegetables with a slotted spoon to a small bowl.

2.  Arrange chicken pieces in a single layer in skillet.  Cook over medium-high heat for 5 minutes per side or until lightly browned.

3.  Add onion, garlic, carrots, parsnips, thyme, salt and pepper to skillet.  Pour stout over chicken and vegetables.  Bring to a boil over high heat.  Reduce heat to low.  Cover and simmer 35 minutes.

4.  Add mushrooms and peas to skillet.  Cover and cook for 10 minutes.

5.  Uncover skillet; increase heat to medium.  Cook 10 minutes longer or until sauce is slightly reduced and the chicken is no longer pink in the center.

Makes 4 servings

Best Recipes: Black Forest Cheesecake

Sweet, red cherries and rich chocolate. What more invitation do you need to whip up this delectable creamy delightful recipe?

Crust
1 cup chocolate wafer crumbs
3 tablespoons margarine, melted
Filling
2 8-oz. pkgs. cream cheese, softened
2/3 cup sugar
2 eggs
1 6-oz. pkg. semi-sweet chocolate pieces, melted
¼ teaspoon almond extract

Topping
1 21-oz. can cherry pie filling
Frozen whipped topping, thawed
Directions
Preheat oven to 350 degrees.
Combine crumbs and margarine; press onto bottom of 9-inch springfoam pan. Bake
in a 350 degree oven for 10 minutes.
Combine cream cheese and sugar, mixing at medium speed on electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Blend in chocolate and extract; pour over crust. Bake
in a 350 degree oven for 45 minutes.
Chill for at least an hour. Loosen cake from rim of pan. Top cheesecake with pie filling and whipped topping just before serving.
This recipe serves eight.

Cookie Baking Tips

Making better cookies is a lot easier if you understand the difference between the average commercial bakery and the home kitchen. These tips will allow you to make better cookies at home whether it be for a special party or your annual Christmas cookie baking session.
There are 4 major things that are done commercially that are overlooked by the average home recipe baker.
Number 1 is that the average home baker does not have a stone oven. Most commercial bakeries have stone shelves and that disperses the heat to the pan in a much more even manner. Obviously, buying a commercial oven for this alone is not feasible for most of us. (I have considered putting a commercial pizza oven in my laundry room but my better half vetoed that idea: -(. Thus I settled for going out and buying an oven stone for our regular electric oven. This serves the same purpose with no loss of space in our laundry room and at a huge savings versus the price of a commercial pizza oven (even the used one I wanted).
The second thing is the thickness and quality of the cookie sheet. The average commercial facility uses a sheet pan or half sheet pan which is probably 2 to 3 times as heavy as the ones used by the average home baker. This like the oven stone disperses the heat much better and makes it much easier for the cookies to bake evenly. I definitely recommend checking out your local restaurant supply house to get some half sheet pans which will definitely be better than the cookie sheet available at your local supermarket or Walmart.
The third item I use when baking cookies is parchment paper. It is much easier to remove the cookies from the paper, your tray doesn't get all cruddy and need to be cleaned between batches and you will have much less burning on the edges.
The fourth thing the average home recipe baker misses is portion control. I have a variety of ice cream type scoops that I use for portion control. This allows each cookie to be the same size and allows them to all bake consistently. When I used a spoon I always ended up with a variety of sizes and the cooking was never quite even.
Hope these tips allow you to make better cookies in your house. I know using these tips has improved mine.

Jack Daniel's Lynchburg Lemonade

1 part Jack Daniel's Whiskey
1 part Triple Sec
1 part Whiskey Sour Mix
1 part 7-Up or Sprite
Garnish with lemon.

Jack Daniel's Rib Glaze

1 cup Jack Daniel's Whiskey
1/2 cup dark brown sugar
1 cup ketchup
2 teaspoons Worcestershire sauce
1/4 cup vinegar
1 tablespoon french lemon juice
3 cloves garlic, minced
1/2 teaspoon dry mustard
Salt and pepper to taste
Combine all ingredients; mix well. Brush ribs with a thin coating of glaze and place on grill. Continue to baste when turning ribs. Makes enough for
2 racks of 7 to 10 ribs each.

Jack Daniel's Marinade

1/4 cup Jack Daniel's Whiskey
1/4 cup soy sauce
1/4 cup Dijon-style mustard
1/4 cup minced green onions and tops
1/4 cup firmly packed light brown sugar
1 teaspoon salt
Dash of Worcestershire sauce
Pepper to taste
Combine all ingredients. Blend well. Use to marinate shrimp or scallops for 1 hour or beef, chicken or pork in the refrigerator overnight. Use to baste the shellfish or meat as it is grilled or broiled. Makes about 1 1/4 cups.

Jack Daniel's Southern Sour

1 part Jack Daniel's Whiskey
1 part Whiskey Sour Mix
2 parts 7-Up or Sprite
Garnish with orange slice

Famous Russian Soup Recipes


Borscht is extremely famous and this is a beet soup. Mixed meat soup and vegetable soup are also properly loved and these soups are often topped with a dollop of sour lotion.

Meat, potatoes, and cabbage are amongst the most popular ingredients in Russian soup recipes. This chicken soup recipe is created with vegetable broth and contains chicken meat as nicely as vegetables and refreshing herbs.

Like a lot of other Russian soup recipes, this one is best when you make it a day in advance, chill it overnight in the refrigerator and then warm it up and serve it the following day, since this lets the flavors combine greater and the soup will have a superior taste.

2 tablespoons butter

1 tablespoon capers

2 chopped onions

1/four lb ham, in 1/2 inch cubes

6 cups drinking water

four oz pickled mushrooms

6 tablespoons flour

two julienned dill pickles

one/two teaspoon white pepper

one/two cup chopped, pitted black olives

1 teaspoon salt

one tablespoon tomato paste

one/two sliced lemon

How to make it:

Boil the beef chuck in the drinking water for an hour and a half to make a juicy, rich broth. Remove and discard the beef bones. Slice the kidney and dredge it in the flour. Saute it in the butter with the onions. Stir the hot dogs, ham, onions, and kidney into the beef broth. Cook for twenty minutes, then add the other elements and cook for fifteen minutes more. Serve warm.
